What is YOUR Favorite Healthy Frugal Meals?

Good day friends. What are some of your favorite frugal HEALTHY meals?

A few of my favorites are....

Pulled Chicken on tortillas (taco based, ranch, or BBQ wraps)
Veggie Soup
Baked Spaghetti Squash with spaghetti sauce
Cabbage, squash, and Zucchini

  1. Hi Chrissy, I think I am going to love all the replies to this post along with your original post and question. I'm always looking for good, healthy and frugal meal ideas.

    Some of ours are:
    ~potato cheese soup
    ~split pea soup
    ~taco soup
    ~Zuppa Toscana soup
    ~beef or chicken and veggie stir fry (heavy on the veggies)
    ~lo mein using lots of veggies and a little bit of meat in it
    ~lemon chicken pasta with peppers
    ~pasta salad with lots of crunch veggies, some cheese and pepperoni
    ~baked chicken with roasted veggies
    ~taco salads
    ~chicken noodle soup
    ~last of the garden veggie soup
    ~meatloaf made with venison or elk burger served with baked russet or sweet potatoes
    ~pasta served with a roasted tomato, peppers, onions, and eggplant sauce (I just don't tell my hubby about the eggplant)
    ~homemade baked pancakes with homemade syrups
    ~grilled cheese and tomato sandwiches on homemade bread

    I know there is more but my mind is still a bit foggy today. ;)

    Chicken quesadillas
    Frito pie
    Chicken enchiladas with cheesy rice and refried beans
    Cowboy soup (hamburger soup with taco seasonings)
    Macaroni and cheese
    Chicken spaghetti
    Chicken Potpie
    Roasts of any kind of meat, beef, chicken, venison

    I'm sure there are more. Great post Chrissy, I will try to come back and see what others share!

  4. *chicken/turkey and rice soup (using leftover roasted chicken or Thanksgiving turkey)
    *beef stew, beef pot pie, beef & noodles (using leftover roast)
    *cabbage and potatoes with ham or smoked sausage
    *chili
    *eggs w/pancakes or biscuits

  5. *Potato Soup
    *Vegetable Soup
    *Corn Avocado Salad
    *Avocado sliced in half top with Pico de galo
    *Chili
    *Coconut Chicken fried in coconut oil
    *Healthy black beans, with stir fry peppers and onions burritos top with cheese sauce.
    In all my soups I like to add chia seeds, hemp seeds, coconut oil, dash of turmeric, braggs liquid aminos, lentils beans. All of these are high in nutrients they not change the taste of the meal.
